Pastalaya

We know you've heard of Jambayla as it's a very popular Cajun dish... but here is a little twist. Pastalaya is a great meal to feed a crowd! It's easy to double or even triple to fit your needs and feed your whole family... So go ahead- invite your parents, in-laws, aunts, uncles, cousins, and friends and serve up this outstanding meal!

Ingredient List:

  • 3 thick cut bacon slices 
  • 1 yellow onion, chopped 
  • 1 green bell pepper, chopped 
  • 2 celery stalks, chopped 
  • 3 garlic cloves, chopped 
  • 5-6 chicken thighs
  • 1 lb smoked sausage
  • 1 (10 oz) can Rotel 
  • 1 (10 oz) can Cream of Chicken
  • 1 (10 oz) can Cream of Mushroom 
  • 2-½ cups of water 
  • 1 heaping Tbsp Better Than Bouillon- chicken base
  • 1 heaping Tbsp Better Than Bouillon- garlic base
  • 1 lb of dry pasta (mix bowtie and spaghetti)
  • 3 green onions, chopped
  • TX-KJN Envie

Cooking Instructions:

Preheat the oven to 350 degrees.

On the stove, heat a cast iron pot or Dutch oven on medium / high heat. Chop bacon and render until cooked. 

Season your chicken thighs with Envie, chop your sausage into bite size pieces and brown in pot. Once browned, remove the meat from the pot and deglaze the pot with chopped onion, bell pepper, celery, and garlic. 

Sauté the vegetables until brown, add chicken, sausage, all canned soups and water. Add both Better than Bouillon, cook for 30 minutes.

Season to taste with Envie then add dry pasta and stir well. Bring to a boil, then press pasta down so it's submerged in the liquid. 

Cover and place in the oven for one hour. Once done, remove from the oven, keep covered for 10 minutes. After it sits for 10 minutes, remove the lid and give it a good stir. 

Add chopped green onions, stir and enjoy!
