This recipe (in some people's opinions) is a delicious twist on the classic Cajun dish, Dirty Rice. Instead of using ground meat AND organ meat, (AKA "awful meat,") this recipe features ground beef (or any ground meat), making it a more approachable version of the dish for some. ** OK...It's me! Elizabeth, Jeremy's wife. I'm "some people!" I just can't bring myself to eat Dirty Rice if it's made with what I call "the awful meats!" So, if any of you out there (or your kids) are like me and refuse to eat it truly "dirty,"...give this recipe a try!
Ingredients:
- 1 lb. ground beef (or other ground meat of your choice)
- 1 medium onion, chopped
- 3 stalks celery, chopped
- 1/2 green bell pepper, chopped
- 3 to 4 cloves garlic, minced
- Olive oil - just enough to coat bottom of pot
- 1 bunch parsley - chopped
- 4 c. chicken broth
- 2 c. water
- 3 c. uncooked white rice
- 1 bunch green onions, diced
- Envie to taste
Directions:
- Sauté onion, celery, & bell pepper until they begin to caramelize, adding the garlic when everything is about half-way caramelized.
- Add ground meat and brown with the veggies. Season with Envie while browning & to taste once browning is complete.
- Add chicken broth and water; bring to a boil.
- Add rice once boiling.
- Reduce to a simmer and cover.
- Cook for 25-30 minutes.
- Once completely cooked, add green onions and mix.
- Serve and enjoy!
