Jalapeño and Cream Cheese Stuffed Pork Loin

This one skillet meal will make your family say WOW! The simplicity of the recipe will have you cooking like a chef and feeling good about your skills. It's an easy week night meal that doesn't lack flavor!

Pork Loin Ingredients:

  • 1 pork loin, butterflied
  • 1 lb bacon
  • 2 large jalapenos, seeded and sliced (save some for potatoes below)
  • 8 oz cream cheese
  • 2 Tbsp butter
  • TX-KJN Envie

Potato Medley Ingredients:

  • 1 yellow onion, roughly chopped
  • 2 Tbsp minced garlic
  • Jalapeno, seeded and sliced (about 6-8 slices)
  • 1 bag fresh baby potato medley, slice potatoes in half
  • Jalapeno, seeded and sliced (about 6-8 slices)
  • TX-KJN Envie

    Cooking Instructions:

    Place bacon on cutting board so pieces are touching (to wrap your pork loin with). Season evenly one side of the pork loin with Envie.

    Place seasoned side down onto bacon slices. Season other side with Envie.

    Place cream cheese and jalapenos evenly across bottom half of the pork loin. 

     

    Roll pork lion into a cylinder. Wrap bacon around the pork loin. Secure across with toothpicks. 

     

    Heat non-stick skillet on medium/high heat. Melt butter in pan. Place pork loin in the pan and season evenly with ENVIE .

    Cook until bacon is cooked on all sides. Add extra jalapeno slices to the pan. 

    While the pork is cooking in pan, put potatoes, onion, and garlic into a mixing bowl. Mix until garlic is evenly distributed. Season with ENVIE. 

    Add potato and onion mixture to pan. 

     

    Cover and place pan in a preheated (350 degree) oven. 

    Cook until pork loin reaches 170 degrees and potatoes are tender (about 1 hour).

     

    Remove toothpicks, slice it up, and enjoy!
