Jeremy's Fried Fish & Shrimp

When Jeremy was growing up, there was a period of time when his dad's company was in the midst of a union mandated strike.  So, his family relied solely on the Catfish they could catch for their dinner.  Eventually, Jeremy began to despise fried fish. But, over the years, his love for cooking, along with a few tips he's picked up from friends has helped him enjoy fried fish again. And, since the creation of Envie...he's enjoying it more than ever before!

Ingredients:
2 lb. Catfish (or Tilapia) fillets
2 lb. deveined/cleaned Shrimp
1 to 2 gal. Vegetable Oil
1 lb. Fish Fry
1/4 cup Louisiana Hot Sauce
Envie seasoning to taste
Frozen French Fries (optional)
Frozen Hush Puppies (optional)

Directions:

  1. Cut each fish fillet down the center to make 2 smaller fillets. If fillets are large, cut them again to make 4 smaller fillets. {Cutting fillets into smaller pieces decreases the cook time per piece while allowing them to get extra crispy.}
  2. Place fillets & shrimp together in a bowl.
  3. Add Louisiana Hot Sauce, stirring to coat all pieces.
  4. Place bowl in the refrigerator for 30 minutes to marinate.
  5. Heat the oil to 375 degrees F.
  6. As oil is heating, place fish fry in a ziplock bag. {If cooking Hush Puppies take the bag out of the freezer now.}
  7. Place 4-5 pieces of fish in the ziplock bag and shake to coat completely.
  8. Place fish in the fryer and cook until the internal temperature is 175 degrees F.
  9. Take the fish out and place on a wire rack &/or a pan with 2-3 layers of paper towels.
  10. Shake a light coat of Envie on the fish as it comes out of the fryer.
  11. Once the fish is cooked, begin cooking the shrimp. {The shrimp will cook quickly and float as they are done. Cook to an internal temp of 170-175 degrees F.}
  12. Shake a light coat of Envie on the shrimp as they come out of the fryer.
  13. Make sure you do not overload the basket when cooking french fries. Do not fill the basket more than half full. Otherwise, it will drop the temperature of the grease too much.
  14. Once fries & hushpuppies are done, place them on the paper towels to drain.
  15. Sprinkle a little Envie on the french fries to finish.
